2021 Paitin Barbaresco Sori Paitin Vecchie Vigne

The Paitin 2021 Barbaresco Serraboella Riserva Sorì Paitin Vecchie Vigne is a masterpiece that I have now tasted at two important moments since its bottling (once at the winery and a year later in my office). It is enormously fine and finessed, revealing an almost weightless texture that feels as smooth as silk. Aromas of wild berry and blackcurrant are framed by an unmistakable earthy note that recalls iris root and fragrant saffron, followed by soft spice, licorice, sour orange peel, clove and black pepper. Twenty-four hours later, the wine shifted toward darker fruit, tar, light smoke and hints of dried herbs or eucalyptus, all while retaining its remarkable tension and precision as the first signs of tertiary complexity began to emerge. The additional richness never comes at the expense of elegance. The precision of this wine reflects a philosophy the estate has embraced since 2016, placing greater emphasis on sensory evaluation of phenolic ripeness rather than analytical measurements alone. Harvest decisions are made by tasting berries from throughout the vineyard, evaluating the crunch of the skins, the color of the seeds and even the lignification of the stems to ensure that freshness and phenolic maturity evolve together. The result is a Barbaresco built unapologetically for longevity, and despite its beauty today, this wine still deserves more time in the cellar.
