The sample of my favorite ouillé white here, the 2023 Côtes du Jura Ostrea Virgula, comes from old vines in the village of Mouchard. It was in an old foudre, and despite the fact that the wine is still marked by the fermentation with primary, balsamic and medicinal aromas, it has a vibrant palate. We discussed some similarities between 2021 and 2023, in the fresh style of the wines, because 2021 was concentrated and high in acidity due to the very low yields of 1,500 liters per hectare as a result of the deadly frost; and in 2023, he got good yields and a healthy crop, and the wines have freshness and are more fluid. This usually stays in foudre for one year and then is transferred to barrel for one more year of aging, as the foudre is used for the next vintage. It's still too early to give it a narrow window, but I'm confident this is going to develop nicely.
