Tarry black fruits, herbs, cedar, and mulling spices are found in the nose of the 2000 Cabernet Sauvignon. It is a highly structured, firm wine with flavors of cedar, brambleberries, and blackberries. Its medium to full-bodied character leads to a tannic finish. Bright medium ruby. Aromatic nose combines blackberry, black cherry, espresso and violet. Tightly wound, even a bit tart, owing to strong acids and rather dominant oakiness. Has less flesh to support its oak than the 2001 merlot, with the result that the tannins come across as chalkier and considerably more dominant today.
