The ‘traditional’ 2011 Côtes du Jura is 80% Chardonnay and 20% Savagnin aged under a veil of yeast. It feels very closed, shy and a lot less expressive than the pure Chardonnay; perhaps the two varieties take some time to marry. This was already bottled and it could be suffering from the operation. The palate is much more expressive and tasty, with deep salty flavors and a long finish. It would welcome some decanting in advance or plenty of time in the glass to open up, and of course a few months in bottle to settle down, but it's a very worthy Côtes du Jura.
