Conveying throughout a soothing, overtly sweet but lusciously and refreshingly sorbet-like impression of apple, pear and lime, this delicate, subtly creamy yet animating and infectiously juicy Kabinett successfully relies on tingle of lime zest and crystalline mineral impingement to supply counterpoint and pushback to its high residual sugar. Prinz noted that the older vines with their tiny berries on which he relies for his Jungfer Kabinett Goldkapsel – which, as usual, he would auction, and didn’t let me taste – conduced to excellent acid retention. But this “regular” bottling is already impressive on all counts, especially given that Prinz indicates it incorporates at least a small volume of must that he lightly acidified.
