I thought the Chapelle-Chambertin, made from 40-year-old vines, was one of the three best wines from Jadot in 1985, but I must admit its cascade of unctuous, berry fruit, toasty oakiness, and remarkable precociousness argue that this wine should be drunk young, by 1992-1995. Jadot's 1985s are loaded with aromas and flavors of red fruits, are judiciously complemented by one-third new oak barrels, and have super color, thanks in part to a very high fermentation temperature of 35°-36° C.
