The 2016 Arbois Pupillin Terre du Lias is produced with Chardonnay from the Sous la Roche and another adjacent parcel, all on the same soils, which now name the cuvée. The bunches are partially destemmed and the juice put to ferment in 600-liter barrels and Stockinger foudres where the wine matured for 12 months. The style of the house is fresh and with good acidity, and Julien Mareschal likes the style of 2016 better than 2015 for the kind of wines he wants to make. He likes good precision in the wines, and he uses a little sulfur, depending on how healthy and how much acidity the vintage has. 5,000 bottles produced. This is the largest cuvée of the domaine. It was bottled in September 2017.
