The Il Borro estate is new to sparkling wine production, but the Ferragamo family has produced a very interesting result. The 2011 Bolle di Borro Metodo Classico Brut is a Rosé sparkler made with Sangiovese. The wine opens to a pale pink color and exhibits aromas of white cherry and wild berry. There are thicker aromas of toasted bread with lively pink grapefruit on the close. The wine ages on the lees for 48 months and was disgorged in March 2016.
