100% Chardonnay from an old vineyard which is very difficult to work and on very poor soil. Dosage 2.6 g/l. Disgorged March 2023. Certified organic. Just fresh apples. Such a fresh, enchanting, pure-fruited wine with the same weightless mousse as the Naturellement, as if the wine had been made in the clouds. Lightly speckled with liquorice and aniseed notes. So contained and ‘whole’ at its centre, and humming with life from its core. Beautiful white citrus. Really pure and long. (TC)

The 2018 Extra Brut Les Fourches (100% Chardonnay) is resonant and super-expressive, with dried lemon peel, chamomile, sage, ginger and mint. This is an especially layered and exotic offering. Vinification and aging in barrels of various sizes work quite well in bringing out the character of Chardonnay on sandy/clay soils over limestone. Dosage is 2.2 grams per liter.
