Fermented in neutral oak with ambient yeasts. Malolactic conversion inhibited. Unfined and unfiltered. Aged on lees in bottle for between 32 and 42 months. Disgorged January 2021. Zero dosage. Light yellow-gold with medium-fine bubbles. Smells of lemon curd and lemon pith. A remarkable combination of electric, salty lemon peel and lemon curd is borne on a light mousse. Wonderfully bright and mouth-watering while retaining a remarkable amount of its primary Chardonnay-ness, despite its time in the bottle. Delicious and unique. (AY)

The 2017 Sparkling Chardonnay Chuy is one of the most distinctive wines I have tasted from Under the Wire. It emerges from the Chuy Vineyard (now Midslope) originally planted with Chardonnay on St. George rootstock by famed vineyard manager Chuy Ordaz. The site has since been acquired by Kistler and been totally redeveloped, so this wine is an ode to the past. And what a swan song it is. Rich, deep and bold, with tons of pure Chardonnay intensity, the Chuy dazzles from start to finish, especially in the way it straddles the line between still and sparkling wine. I would love to own this. No dosage.
