80–85% Pinot Noir, the rest being Chardonnay. Certified Salmon Safe and LIVE-certified sustainable. Certified organic by CCOF and biodynamic by Demeter. Medium salmon in colour. Dried strawberries and orange rind on the nose. The front and the middle of this wine are pure texture with broad richness of fruit – but the point seems to be in its lengthy finish, driven by marmalade, a tart burst of lemon and a lick of caramelised brioche. The 2018 Mineral Springs Brut Rosé has 3.6 grams per liter dosage and was disgorged in May of 2022. Medium cherry-pink in color, it has delicate scents of watermelon, strawberry, fresh bread and wet stone. The light-bodied palate is dry and weighty with an intense core of fruit and a long, perfumed finish.
