Tasting notes
Fully destemmed and allowed to warm up a bit before going into a concrete tank for fermentation with ambient yeasts and no additional temperature control. A combination of pumpovers and punchdowns are used with a goal of only moderate extraction. Spends between 30 and 36 months in 500-litre used French oak. Bottled unfined and unfiltered. Smells of dried herbs, fresh herbs, flowers, red shiso, road dust and plum. Bright flavours of plum and sour cherry are wrapped in fleecy, fine-grained tannins as fresh chopped herbs and dried herbs mix with flowers and a hint of salinity. Still remarkably youthful, but with mellowing tannins. Outstanding acidity and a wonderfully unique flavour profile at this point in its evolution. (AY)

The 2015 Cabernet Sauvignon Peter Martin Ray Vineyard will delight lovers of old-school California Cabernet. Bold, savory and super-expressive, the 2015 hits all the right notes. Despite its very classic sense of structure, the 2015 can be enjoyed with minimal cellaring, although a few years in bottle will help the mountain tannins soften. Translucent, nuanced and expressive, the 2015 is a winner from Ceritas.
About the producer

Created in 2005 by John Raytek, Ceritas is one of California’s most exciting producers. The project is focused on making single-site wines from Northern California’s coastal regions, largely Pinot Noir and Chardonnay.
