Good deep, bright ruby. Complex nose melds pungent cassis, dark chocolate and minerals. Supple and mouthfilling, with a lush texture but good acid lift to the flavors of dark fruits, crushed rock, smoke and chocolate. At once firmly built and generous, finishing with sweet, suave tannins and excellent length. This is from a vineyard planted on a cinder cone, a steep hillside made up of accumulated volcanic fragments.

The dense ruby/purple-tinged 2007 Tor Cabernet Sauvignon Cimarossa Vineyard reveals juicy, seductive aromas of red and black fruits intertwined with crushed rock, graphite, and flower notes. Medium to full-bodied with loads of texture and a heady, rich finish, this wine can be drunk now or cellared for 15-20 years. Because the majority of Tor Kenward’s wines are from Napa, I have also included his Chardonnay from Sonoma as well as his Grenache/Syrah blend from Bennett Valley. Tor Kenward, the long-time PR professional at the Beringer group, continues to fine tune his craft. He has been a collector and connoisseur of European wines for as long as I have known him (over 25 years ), and I am sure that gives him a perspective in terms of searching out top sites to make wines that combine the complexity of European wines with the beautiful fruit, texture, and purity that the viticultural Shangri-La of California provides. Tor produces three Cabernet Sauvignons, and tasting through the 2007s was a treat. Bright ruby-red. Cassis, licorice, menthol and tobacco on the nose, lifted by a floral topnote; a bit less exotic than the 2006. Chewy, dense and sweet, with terrific mid-palate depth of flavor and a sappy impression of grip. Highly complex and complete cabernet sauvignon with superb persistence and very fine-grained tannins for Howell Mountain cabernet.
