Although labelled as non-vintage, the Coeur de Crae Trois-Puits comes entirely from the 2018 vintage. The base wine was aged in 350- and 500-litre old oak, disgorged in December 2022 with 3.5g/l dosage. This is a single-site expression of Pinot Noir from Premier Cru Les Chauds Champs, in Trois-Puits. The nose is enticing with marzipan, grilled almonds and Golden Delicious apple, as well as white peach and a croissant richness. There is such purity to the palate which is driven by pinpoint acidity, yet there’s also a suppleness here, with a soft-textured mousse that makes it open. The finish is long and mouth-watering, with the saline scent of oyster-shell lingering on the tongue. A beautiful Blanc de Noirs.

The NV (2018) Extra Brut Coeur de Craie de Trois Puits Premier Cru is a pure Pinot Noir from the single parcel Les Chauds Champs in Trois Puits, fermented in 500 and 350-liter barrels. Salty creaminess and raw short crust pastry show enticingly on the nose. The palate continues in the same vein, with creamy flow that seems to lead down to beautiful depth of fruit and Pinot generosity singing with red plum and maple syrup spice overtones. Fine mousse supports and enlivens throughout and affirms the creamy elegance which is evident all over again in the long finish. Dosage is 3.5gr/L. Disgorged: December, 2022.
