The 2000 Barbaresco Pajore is a dark garnet, sweet in aroma with suggestions of caramel, plums, and chocolate, deep and intense on the palate and with an attractive tarry minerality. Saturated medium red. Redcurrant, plum and mint on the nose. Spicy and sweet, with a minty nuance and good depth. But a bit unforthcoming in the middle and showing some youthfully aggressive wood tannins today.
