Needing the most time to open up, the 2000 Clos de l'Oratoire des Papes Châteauneuf-du-Pape is still youthful, delivering a masculine, slightly unyielding profile with a dense, very traditional bouquet of herb, ground pepper, garrigue, smoked meats, and licorice. Medium to full-bodied and still showing plenty of fruit and texture, this textbook Châteauneuf-du-Pape is aging beautifully and should continue to hold for a number of years. If drinking now, I would open the bottle 4+ hours prior to when you plan on drinking.
