The 2016 Sancerre Sauvage is deep, rich and intense but also pure, fresh and herbal (coriander) on the rather coolish and precise nose. Quite phenolic (if not a bit astringent) on the palate, this is a concentrated and full-bodied wine with lime zest notes on the dense and substantial finish. This is another 2016 that still seems to be closed but will surely improve with aeration or bottle age. Concentration, juice, structure, salt and length, it's all there, but the phenols still don't let the wine flow. Tasted in January 2021.
