With its colorful mosaic-like front label, the Zýmè 2019 Kairós shows a very profound and rich bouquet with hints of raisin cookie, dried fig, plummy fruit, wet potting soil and exotic spice. The wine veers from sweet to savory, and you get both opposites over a full-bodied texture. This wine represents a very ambitious blend of 15 local and indigenous grapes (mostly red, plus four white grapes). The finish is dry and dusty on this 24,000-bottle release. This wine is unlike anything you can find on the market today.

The Kairos is typically a crowd pleaser, and the 2019 is no different, with its darkly alluring bouquet of sweet oaken spice, cocoa, cloves and black cherries. It’s elegant and refined in feel, with silken textures and masses of ripe red and black fruits framed by subtle tannins. A twang of sour citrus and balsamic tones resonate under rosy inner florals as this finishes incredibly long and lightly structured. The 2019 takes things to another level for Kairos, yet it also demands further cellaring to come fully into focus. It’s a blend of fifteen red and white varieties that are co-fermented and matured for twenty-four months in French oak.
