The 2017 Savage White, which underwent a 6- to 8-month ferment (the longest ever) is a blend of Sauvignon Blanc, Chenin Blanc and Sémillon and was matured in used barrels for 10 months. It has a very fragrant bouquet of peony, lemon curd and a touch of apricot blossom, very nuanced but compelling. The palate is taut and linear on the entry and quite saline on the mouth, with a slightly Muscat-like finish. Utterly delicious and quite cerebral too.
