Fermented in stainless steel and later aged in used oak foudres, the 2011 Arbois Pupillin Savagnin is an ouillé style, aged without veil and raised in topped up casks. It felt more oxidative and a little advanced at first, with some aromas of pollen, beeswax and flowers, which needed time to breath and might be going through an awkward phase. With time, it developed some notes of tangerine peel. The palate revealed a ripe year with integrated acidity that should provide the stuffing to improve slowly in bottle.
