The 2009 Grand Cellier Rubis has developed beautifully since I last tasted it about six months ago. Those months in bottle appear to have given the 2009 an extra kick of drive to balance the voluptuous, ample fruit of the year. Streaks of underlying minerality give the finish a salivating edge that is utterly irresistible. This is a fabulous showing for the 2009.

Vilmart's 2009 Grand Cellier Rubis is totally seamless in the glass, with soft contours, tons of complexity and fabulous overall balance. In keeping with the radiant style of the year, the 2009 is already open and wonderfully expressive. Crushed flowers, red berries, tangerine and spices add the final notes of complexity. My personal preference is to drink the Vilmart Rosés on the young side. The 2009 is 60% Pinot Noir and 40% Chardonnay, both from Les Blanches Voies Bas in Rilly-la-Montagne. Disgorged January 2014. Dosage is 8 grams per liter.
Vilmart's 2009 Brut Premier Cru Grand Cellier Rubis is fabulous. A rich, deep rosé, the 2009 is all about texture. Layers of fruit open up in the glass in a silky, aromatically expressive Champagne loaded with class. The radiant, resonant style, so typical of the year, is on full display. The Grand Cellier Rubis remains one of the most polished, compelling wines in Champagne. The 2009 is another drop-dead gorgeous showing from Vilmart and proprietor Laurent Champs. The Grand Cellier Rubis is 60% Pinot Noir and 40% Chardonnay. This bottle was disgorged in December 2013. Dosage is 8 grams per liter.
