The 2021 Bianco Testamatta is a total pleasure to take in, with its bouquet of white flowers, almond paste and young peach dazzling the senses. This is silky, nearly opulent in feel, with brisk acidity to balance as apricot and exotic spice notes cascade across the palate. The Bianco Testamatta becomes almost salty through the finish while remaining crisply refreshing as nuances of Bosc pear and honeyed inner florals fade.

Entirely made from Ansonica from Giglio Island, the 2021 Testamatta Bianco is sunny with tropical notes of pineapple, orange rind, a dark mineral profile, and sea spray. It has a full texture without being heavy and is lifted by its stony feel and crunchy salinity. This is a lovely and unique wine to drink over the next 6-8 years. Located in Fiesole, Bibi Graetz founded his eponymous estate in 2000. All the red wines are entirely produced from Sangiovese and offer the wonderfully polished style of the region, which is why I have included them here as a stepping stone for what is to come with my next report on Chianti.
About the producer

Based just outside Florence, Bibi Graetz is something of a maverick in the Tuscan wine scene. Working with old vineyards of indigenous grapes around Chianti, he produces intense wines classified as IGT Toscana; not fitting neatly in either the Super Tuscan or Chianti camp.
