There are a number of different Chardonnays, as he has more vineyards of the variety than any other grape, the most common of which is from marl soils, from a west-facing slope. I tasted the 2016 Mizuiro Chardonnay, which is open and tender on the nose but has a more precise palate that's serious, dry and mineral, with a dry and tasty finish and a saline quality.
