Tasting notes
The 2019 Chablis Les Séchets Vieilles Vignes 1er Cru has a very nuanced and mineral-driven bouquet, precise with beautifully integrated oak. The palate is very well balanced with a fine bead of acidity, harmonious and poised with a judicious dab of spice. This is a lively, terroir-driven Chablis with the salinity to beg another sip. Bon vin . Tasted blind at the annual Burgfest tasting.

The 2019 Chablis Les Séchets 1er Cru has a slightly exotic nose of white peach, fresh pear and Granny Smith apples; honeysuckle and a touch of Earl Grey emerge with time. The well-balanced palate delivers a fine bead of acidity and good depth. Quite dense and rich toward the finish, with a persistent aftertaste. Very fine.
The 2019 Chablis 1er Cru Séchet Vieilles Vignes is wonderful, offering up enticingly marine aromas of citrus oil, oyster shell and rock salt. Medium to full-bodied, satiny and concentrated, it's layered and multidimensional, with superb depth at the core, racy acids and a long, chalky finish. As ever, it's one of Billaud's finest cuvées.
About the producer

Samuel Billaud started making wine under his own name in 2009, but he is one of the most experienced producers in Chablis, having made wine in the region since 1985.
