Whole bunches but with the main stem removed, taking five people 4–5 hours to complete! One, 1-year-old barrel. Layered and complete, with subtle cinnamon, stones, earth, ripe red cherry and spice. Firm, very fine tannins, with a tense, tight, but long finish. This will be a very fine wine. (TJ)

The 2018 Echézeaux Grand Cru contains around 60% whole bunch, though for the first time Haisma cut out the central stem of the cluster (à la Leroy and Mortet). The harmonious bouquet features blackberry, raspberry preserve and hints of crushed violet. The palate is medium-bodied with fine tannins and beautifully defined, slightly earthy red berry and mulberry fruit. Very detailed on the finish. This is superb.
