Tasted blind at the annual “Burgfest” tasting in Bouilland. The 2013 Chassagne-Montrachet 1er Cru Les Baudines has a reserved and slightly chalky bouquet. More nuanced than Benjamin Leroux's Les Baudines, it nevertheless has fine delineation and focus, simply needing more time. The palate is well balanced with crisp acidity, very saline in the mouth, leaving the taste buds salivating and asking for more on the finish. Not everyone's cup of tea, but it is mine. Tasted May 2016.

(still full of gas--Pillot uses CO2 for "a natural batonnage," but the malo has finished): Piquant aromas of grapefruit, lime and ginger are accented by a note of white pepper. Brisk and stony on entry, then almost surprisingly silky and thick in the middle but with terrific lift to its intense grapefruit and crushed rock flavors. Tactile but not phenolic or green.
