The label: Designing labels never came easy to Pieter, until at 30 he started to suffer from epilepsy with “the result: I think I had a breakthrough in design, inspiration of Epileptic proportions… the drawing and designing of my labels came as a direct result of my epilepsy. And here’s the strange part which I cannot prove – I believe that something in my brain changed due to the epilepsy as before I had no skill or desire to draw, paint. Now I still don’t have the skill, but at least I like my labels! 100% Semillon from Elgin. Three different vineyard sites, vinified separately. Aged for a year and a half to gain complexity, lose fruit, become more linear and develop more of a core. One third made in clay amphora. Another third in old french oak. The last third from a different vineyard - particularly rugged terrain that makes sensational fruit ("tastes completely different to anything I have in cellar") also aged in old french oak. Why Semillon? "Semillon is a fantastic grape, but the moment you put it on the label people are afraid to buy it. People don't know what they're drinking with my wines - they're willing to experiment. This wine is all about texture and is utterly sublime, incredibly silky and layered thanks to some clever blending and skilled élevage. The wine aromatically has a light savoury smokiness allied with bright citrus zest and waxy notes and delicate white peach flavours and a mineral salinity on the palate. The bright refreshing acidity is completely integrated with the fruit making it very well balanced and even set on the palate. Superb.

There's a huge opportunity with Semillon in South Africa," says Pieter Walser and I fully agree. What a wine this is, marrying grapes from Elgin and Cape Agulhas that are fermented in amphorae and old wood. Pithy, herbal and toasty, it has lanolin and honeysuckle aromas and stony, tangy aftertaste
