Disgorged with six grams per liter dosage after six years on the lees, Ayala's 2012 Brut Blanc de Blancs is a pure, generous wine, bursting from the glass with expressive aromas of brioche, crisp yellow orchard fruit, beeswax and dried white flowers. On the palate, it's medium to full-bodied, fleshy and vibrant, with a broad, attractively vinous attack, brisk acids and a fine, youthfully exuberant mousse, concluding with a long finish.

100% Chardonnay from the Côte des Blancs. Minimum 6 years on lees. Dosage <6 g/l. Mid gold. Richness of doughy, bready lees, with a marked marine, oyster-shell note and creamy apple aromatics. Linear and focused palate, with direct citrus and apple, nutty, bready lees and a fine mousse. Crisp acidity nicely balanced by the dosage. Fine length. (TJ)
