The 1995 Champagne Louis XV Brut opens with layered notes of apricot, chestnut, fruitcake, and preserved orange. Full-bodied, it’s robust, layered, and long, with notes of chalky earth and savory wood. The mousse adds spices to its notes of ripe apricot fruit and dates. This would be a good match with a simple cheese like Parmigiano and Marcona almonds with honeycomb. Disgorged in 2006 with 6 grams per liter dosage.

The 1995 Brut Miilésimé Louis XV, an equal blend of Pinot Noir and Chardonnay from Grand Crus, displays a golden hue with amber glints. Its smooth nose unites creaminess, honey, dried cep and roasted cashew nuts, swirling aromatically around golden plum fruit. The palate is vividly fresh, edged with honeyed evolution yet sprightly and bright, oozing with ripe golden plum and a touch of golden sultana. Exquisite lemony freshness defines the lasting finish. Complex nose of figs, mushrooms on puff pastry, praline, iron, salty cheese and dried pears. Medium-to full-bodied with silky bubbles. Deliciously salty and savory. Rich, but still bright. One to sip at and observe the evolution. Original disgorgement in 2006 (11 years on the lees). Delicious now.
