The 2016 Chablis Les Preuses Grand Cru has a tightly wound bouquet with just a subtle reduction, but one can still gauge the citrus fruit underneath, and hints of white peach and dried apricot. The palate is well balanced with impressive depth. It is not the most precise Les Preuses on the block, though there is satisfying length and a pleasant tang of spice on the aftertaste. One to watch. The 2016 Chablis Grand Cru Les Preuses was vinified entirely in stainless steel this year. The wine offers up aromas of honeyed peaches and flowers, followed by a medium to full-bodied, tensile, tangy palate, with a reserved profile and a stony, saline finish. It's deeper and more concentrated than the Vaudésir. This isn't a historic rendition of this bottling, but it's a fine effort in a challenging vintage.

Tank sample. Ripe and fragrant with citrus and apple and a very nicely restrained cedary oak character, very subtle. Subtle on the palate too, not the fruit depth of the Mont de Milieu but it has real precision and stony Chablis finesse with a long, succulent finish. Difficult to judge its ageing potential. (JH)

Medium yellow. In a rather virile style for Les Preuses, offering scents of spices, herbs and caraway seed. Seriously concentrated and saline but quite tight in the early going, with notes of spices and flowers providing inner-mouth lift. The acidity here is only 3.88 grams per liter but this very dry, imploded, low-fat wine has no shortage of tension. The firm-edged finish displays excellent dusty persistence. This will need aging.
