The 2016 Chablis 1er Cru Vaillons Les Minots is drinking very well, offering up an expressive bouquet of lime cordial, spring flowers, white peach and ripe citrus. On the palate, it's medium-bodied, satiny and expansive, with an open-knit profile but nice depth at the core. It's a charming, immediate vintage of this bottling that I suspect is best enjoyed in its youth.

(made from the warmest section of Vaillons, according to Piuze): Aromas of fresh mirabelle , wild herbs and minerals suggest a concentrated wine. Fine-grained, brisk and intense, offering mineral-driven flavors of green papaya and sea salt. In an early-picked style, finishing penetrating and persistent. This should make a lovely drink.
Firm reduction flattens the underlying fruit at present. There is once again excellent volume to the highly seductive, round and borderline opulent flavors that exhibit more obvious minerality on the clean and dry finish.
