2007 Vin Jaune Chateau Chalon

One year in bottle has done good to the 2007 Château Chalon, the first vintage Stéphane Tissot produced from this prestigious appellation -- the most renowned one from Jura. The nose feels much more complex and deeper than the 2008. This is very elegant and fresh; it even feels light on its feet. It has great balance and stuffing to age forever. 3,000 bottles produced in his first vintage after he bought 1.25 hectares of Savagnin vineyards in Château Chalon. There is a terraced forest above the vineyard in Chalon, so he will try to plant a further 1.4 hectares. In the future, there will be two more vin jaunes: one from La Tour de Curon and a another one from La Mailloche (clay soils from Arbois). Tasted in isolation and as it was released relatively early, this felt like the wine of the vintage, until some of the heavy weights were released. However, this is truly remarkable for a first vintage.
