2006 Ayala Perle

Unfurling in the glass with notes of wheat toast, honeyed peaches, rock salt, dried flowers and lily pollen, the 2006 Cuvée Perle d'Ayala Millesime Brut is showing well and numbers among the more youthful, precise wines produced in this warm vintage. On the palate, it's medium to full-bodied, bright and precise, with a broad attack, a beautifully refined mousse, zesty acids and a long, saline finish. This spent eight years on cork before disgorgement and saw six grams per liter dosage. 15,000 bottles were produced.
