Raveneau’s 1992 Chablis Grand Cru Les Blanchots is blessed with a bouquet that momentarily transports you to the place of its birth. Here, wet wool, struck flint, smoke and wet pavement, still intense after 25 years and beautifully defined. The palate is poised straight from the start, refreshingly saline with a killer line of acidity. I just adore the tension and energy of this Chablis not to mention the sustained aftertaste that seems to continue for 45 to 60 seconds after it has departed. Wonderful. Tasted at the La Paulée in Beaune.
