Medium to full-bodied, the NV Champagne Brut Rosé has a 2021 base and a delicate pale pink color. It is a blended style with a small harvest of 15% Pinot Meunier, 45% Pinot Noir, and the rest Chardonnay, along with 18% red wine. Flavors include pastry cream, white strawberry, fresh cranberries, and white grapefruit. Medium to full-bodied, the pepper and refreshing mousse enhance the light spices. Drink over the next couple of years. Emilien Boutillat took over as Chef de Cave at Piper-Heidsieck for Régis Camus in 2018. A native of Champagne, Mr. Boutillat has a versatile background in winemaking, having worked for several wineries worldwide, including prestigious estates such as Château Margaux in Bordeaux and Peter Michael in Sonoma, California. He also spent time in Chile, Châteauneuf-du-Pape, and Franschhoek, South Africa, where he produced Cap Classique (sparkling wines).

A bright electric pink hue, the NV Champagne Sauvage Brut Rosé is inviting and fruity upfront with aromas of preserved strawberries, grapefruit, fresh flowers, and pastry dough. Approachable and juicy, it fills the palate with a frothy mousse, elegant spice, and a silky mouthfeel. It is ready to enjoy now and should offer a wide window for drinking over the coming few years.

With the 2018 vintage as its base, the NV Champagne Sauvage Rosé is salmon-colored with a copper tinge. Historically, this cuvée poured a very deep color, but they have dialed back on the color and the power, working toward a more refined and elegant style. This edition is a silky expression with attractive ripe, fresh red berries, roses, and croissants. Rounded, with a refined mousse that enhances the creamy texture, it offers notes of fresh apricot and juicy tangerine fruit on the finish. A blend of 50% Pinot Noir (15% red wine), 25% Pinot Meunier and 25% Chardonnay with a dosage of eight grams per liter, Piper-Heidsieck NV Brut Rosé Sauvage has aromas of strawberry, wild strawberry, orange peel and spices. The palate lacks consistency and depth but remains fresh and fruity.
