Tasting notes
This is my favorite vintage of recent with loads of roses and plums and berries. Flower petals and sandalwood too. It's full-bodied and beautiful with firm tannins and a lovely balance. Fruity and long. Rich and juicy finish. Already gorgeous. Wonderful length.

A little tight and firm. Some might call this lean but I like the dark chocolate and blueberry character. Finishes with some chewy tannins... find the wine.
The 2007 Les Pavots, a Bordeaux varietal blend of 70% Cabernet Sauvignon, 17% Cabernet Franc, 10% Merlot, and 3% Petit Verdot, is brilliant. Its opaque purple color is accompanied by gorgeously complex aromas of melted chocolate, espresso roast, blackberries, and cassis. Full-bodied with a superb texture, a subtle note of oak, and fabulous concentration, it is more reminiscent of a Right Bank Bordeaux than one expects with this much Cabernet Sauvignon in the blend. A thirty-year wine, its impeccable balance and the sweetness of its tannins make it accessible already. (RP)
The 2006 Les Pavots (a 2,730-case blend of 77% Cabernet Sauvignon, 13% Cabernet Franc, and the rest Merlot and Petit Verdot) exhibits big notes of chocolate fudge intermixed with dark berry fruit, forest floor, underbrush, and some smoky oak. The wine is full-bodied, with remarkable intensity, low acidity, and a fleshy, opulent mouthfeel. (RP)
