The barrel-fermented 2003 Cervaro delle Sala (80% Chardonnay and 20% Grechetto) is a lovely effort. It presents a very ripe, open nose along with generous ripe tropical fruit, sweet toasted oak, cinnamon and butterscotch, showing excellent length on the palate and surprising freshness considering the vintage. It should drink well to age 10-12.
