Produced from extremely old vines (ranging from 40 to 80 years old), the dark ruby-colored Gevrey-Chambertin Combe Aux Moines possesses a fabulously deep nose of sweet, dark spices with a touch of mocha. On the palate, this silky-textured, thick and highly concentrated wine offers flavors of huge ripe black fruits intertwined with a touch of milk chocolate. Built to last, it should be at its best between 2002 and 2014. This note is the result of tastings I did in Burgundy between January 7 and January 29. The wine was tasted from cask, not bottle. Pinot Noir, a fragile varietal, reacts poorly to fining, filtration, and careless bottling techniques, I recommend caution when considering buying a red burgundy based on cask samples. I called it as I tasted it, and hope the bottled wine reflects the quality of the samples I was provided. Excellent deep ruby color. Black cherry, tar, spice and a faint suggestion of cooked fruit. Creamy and round in the mouth, but marred by a whiff of varnish. Slightly drying finish. Is this representative?
