The 2000 Chassagne-Montrachet Le Cailleret boasts a gorgeous nose of liquid minerals, anise, and acacia blossoms. Juicy, velvety-textured, and medium-bodied, it possesses a flavor profile crammed with lemon-infused minerals. It is vivacious and zesty. Anticipated maturity: now-2008. Bright, pale color. Smoky, slightly reduced aromas of lime, flowers and nut oil, with a hint of sulfides. Then penetrating, hard-edged and dominated by its structure. Tight in the middle, with seemingly strong acids. Firm-edged finish throws off fruit notes of peach and apricot. Will need at least a few years of bottle aging.
