Due to the combe (or break in the hillside) that funnels cool wind from the west onto its vines, Mortet had never before seen the level of ripeness that his parcel of Gevrey-Chambertin Lavaux St. Jacques was able to attain in 1997. It is a dark ruby-colored wine with stony, black fruit aromas, as well as a firm, refined, fresh character crammed with blueberry jam, black fruits, and metal-like flavors.
