The 2006 Chablis Vaudevey (spelled on these labels as one word) shares with their 2005 rendition of this site its delicacy, its sweetly-perfumed flowers, and a savory lobster shell character. Generous peach and melon succulence extend to a shimmering finishing exchange with mineral elements. This was assembled but not yet bottled when I tasted it, and should drink well for at least 4-6 years. Winemaker Denis de la Bourdonnaye and proprietor Michel Laroche – who export 85% of their wines, and were Burgundy’s pioneers (along with Verget) in utilizing screw cap closures – are dedicated to the proposition that Chablis can be seductive and sensual while remaining true to its terroir, and they have proven this in bottle with their outstanding 2005 and 2006 collections. Pale, bright yellow-straw. Orange and minerals on the nose. Moderately dense and juicy, with ripe stone fruit flavors framed by bracing acidity. In a very fresh, somewhat austere style, opening slowly to show a note of cyanic peach pit. From east-facing vines on limestone. This would be perfect with a quiche or with fish.

(about 10% done in barriques, one-quarter of which were new) Pale yellow. Musky nose combines quinine, ginger and fresh herbs. Very rich, pure flavors of nectarine and brown spices. The gingery quality gives definition to the fruit. These vines are always picked at the end of the harvest, according to Bourdonnaye, sometimes as long as two weeks after the first grapes come in.
