The zesty lemon and pear-scented 2000 Puligny-Montrachet Cailleret is light to medium-bodied and tightly wound. This lace-like, detail-oriented wine is well-made and reveals apples, minerals, and pears in its flavor profile. Projected maturity: now-2009. Steely aromas of peach, pear, smoke and minerals. Drier in the middle palate than the Meursaults; comes across as less superripe but perhaps more pure than all but the Perrieres. Fresh flavors of peach and spice convey a strong impression of terroir Subtly persistent finish features a minty nuance. The 2000s here finished with lower levels of residual sugar than the '99s, noted Boyer, and this wine is especially dry.
