A dark, powerful Burgundy, the 2011 Vosne-Romanée Les Suchots is another wine deeply marked by site. Black fruit, smoke, tar, incense and scorched earth all come together in this decidedly masculine, brooding wine. Ideally, the 2011 is best cellared for at least a few years, but it will always remain full-bodied and intense.

Medium red, less deep than the Beaux Monts. Red fruits and smoky minerality on the nose; could use a bit more clarity. Broad and voluminous but quite dry, even inscrutable, showing a lightly herbal character to go with its red fruits. Finishes firmly tannic and persistent. The hardest wine in the cellar to taste today: this needs the sweetening influence of a racking.

The Echezeaux is what one expects of Grand Cru burgundy but rarely gets-an explosively rich yet elegant wine that titillates the palate with exotic flavors. When asked why his wines are so consistently great, Jayer simply responds, "I make the kind of wine I like." His wines are aged in 100% new oak, are never filtered, and are bottled directly from the barrel. The excellent color and well-delineated, intense Pinot Noir fruit he gets could well come from his special "cold maceration," which involves totally destemming the grapes after picking and putting them in tanks where they stay before the fermentation starts. This is even spicier with a really lovely panoply of various spice elements that include sandalwood, hoisin and cinnamon on the black cherry and raspberry liqueur scents that also display an herbal hint. There is excellent volume and intensity to the powerful yet generous middle weight flavors that coat the palate with dry extract on the textured, focused and velvety finish.
