The 2021 Sauvignon Blanc is bright and racy, with some lemon and lime-like fruit as well as subtle minty, floral, and tangerine notes that emerge with time in the glass. It's a beautifully balanced, elegant, yet still textured Sauvignon Blanc that's impeccably made. Drink bottles over the coming couple of years.

The 2021 Sauvignon Blanc is a new wine from Chiara Mondavi, sourced from an organically farmed vineyard in Mendocino. Lime, mint, jasmine, and white pear lend an exotic quality that recalls Rued Clone Chardonnay or Riesling. This mid-weight, creamy Sauvignon Blanc has so much to offer. Aging was done in equal parts tank, oak and cement. This is an auspicious debut.
Led by Chiara Mondavi (Tim's daughter), Sentium is produced using fruit purchased from Redwood Valley. The 2021 Sentium Sauvignon Blanc includes 8% Sémillon and was fermented and aged in roughly equal parts oak, stainless steel and concrete. On the nose, there's a hint of fumé character, joined by notes of fig and melon. It's medium to full-bodied, plump and rounded, with a gentle, rounded finish that brings in just enough grapefruit-like flavor and acidity to be refreshing. Fewer than 500 cases were produced.
