Whole-cluster pressed into barrels to ferment with ambient yeasts slowly at low temperatures. No stirring. Some barrels are allowed to go through malolactic conversion, many are blocked. Aged for 15–18 months in 60–80% new French oak before bottling. Smells of lemon pith and orange peel with a hint of pastry cream. Lemon-peel and pastry-cream flavours mix with toasted oak and vanilla as bright acidity keeps things brisk. A faint chalky quality lingers with citrus-pith notes in the finish. Classy. (AY)

Grapes for the 2023 Chardonnay UV Vineyard were harvested on October 2, and the wine matured for 15 months in around 80% new French oak. It has detailed aromas of poached pear, elderflower, panna cotta and holiday spice. The medium-bodied palate has a satiny texture and precise, slowly expanding flavors. It’s balanced by vibrant acidity and has a very long, elegant finish.
