Daniel-Etienne Defaix holds back his Chablis, only releasing the wines when they are ready to drink. The latest batch of wines to emerge from his cellars includes this 2014 Les Lys – a cooler, northeast-facing site within the larger Vaillons Premier Cru which has become our favourite in his range. From a superb white Burgundy vintage, this is still so vibrant and youthful. The nose is mineral and steely, with lithe citrus pith and a creamy edge. It's concentrated and layered with zesty lemon pith, mineral purity and just the slightest hint of honey emerging. Long, vibrant, with pinpoint acidity yet plenty of weight too, this is textbook Chablis. Good to go now, this will drink beautifully over at least the next five years.
