Tasting notes
Another stunning Champagne, the 1975 Dom Pérignon Œnothèque (Disgorged 2007) remains one of the greatest wines I have ever tasted from Dom Pérignon. This bottle is truly spectacular from the very first taste. With its expansive, soaring aromatics and bright, finely sculpted fruit, the 1975 simply has it all. Even after several hours of air, the 1975 remains breathtakingly vivid. The 1975 Œnothèque embodies the classic style of late-release Dom Pérignon in its penetrating reductive notes.

The 1975 Dom Pérignon Oenothèque has always been utterly mesmerizing from bottle, but from magnum, it is, well, extraterrestrial. What else can I say? A vivid, utterly hypnotic Champagne, the 1975 Oenothèque (magnum) graces the palate with the most exquisite white flowers, lemon peel, honey, tangerine, pear and white truffle nuances imaginable. The 1975 is timeless and eternal in its beauty, with a combination of layered texture and crystalline purity that will make those lucky enough to taste it beg for a second glass. From what I have been told, the 1975 magnums will not be released commercially, at least not on a wide scale. Readers fortunate to find the 1975 in the big bottle should not hesitate. This bottle was disgorged in June 2009. $1,799 in 750 ml.
I have always adored the 1975 Dom Pérignon Oenothèque for its silkiness and total finesse, qualities that are on full display tonight. The 1975 Oenothèque is rare and very expensive, but for those who seek and can afford the best, it is a must-have. Disgorged 2007
The 1975 Œnothèque (magnum) was even better. It showed surreal elegance and clarity in a vibrant, mineral style laced with the essence of smoke, ash and crushed rocks. Simply put, the 1975 was spectacular, even if it was a bit tight owing to its recent disgorgement.
