(disgorged May 20, 2010) Pale orange-pink. Fresh, mineral-accented aromas of redcurrant, strawberry and raspberry, with hints of dried rose and white pepper. Zesty, palate-staining red berry and blood orange flavors gain flesh and weight in the mid-palate, picking up a note of candied flowers. Dry and taut but packs a punch, finishing with outstanding clarity and stony persistence. This is still a baby.

The 2000 Elisabeth Salmon is weightier than the NV Brut Rose yet everything is simply in the right place. This is a gorgeous, wonderfully expressive Champagne from Billercart-Salmon that is even more impressive than it was last year. The 2000 Cuvee Elisabeth Salmon is 50% Chardonnay and 50% Pinot Noir, of which 10% is still Pinot juice. Roughly 10% of the wine was aged in cask, and the wine was bottled with 9 grams of dosage. The 2000 Cuvée Elisabeth Salmon is made in a very pretty, full-bodied style with plenty of generous, round fruit. The 2000 doesn't quite have the freshness of the finest vintages but it is nevertheless admirable for its warmth and long finish.
