Malolactic conversion is blocked on these wines, which are fermented and aged in neutral oak barrels. Very broad and cheesy on the nose, lots of savoury dairy in with preserved lemons and green fruit. Something quite Chablis-like here. Lots of textural breadth and buttery fruit on the palate, which is savoury and complex. This is more about texture and creaminess than anything else. Intriguing and unique. (TP)
