60% Corvina/Corvinone, 15% Croatina, 15% Rondinella, 10% other native red varieties. The Illasi Valley is to the west of Soave and has long been known for the quality of its Valpolicella. The vineyard is certified organic and is south-facing with good exposure and limestone and clay soil. Guyot-trained vines are planted at 5,800 per hectare. The grapes were hand-picked and dried naturally, then pressed and destemmed. Fermentation at 23–24 °C for approximately 30 days with daily pumpovers and punchdowns. The wine was then aged in 500-litre barrels for 36 months followed by a year in bottle before release. Winemaker: Dario Pieropan. Organic and vegan. TA 6.75 g/l, pH 3.39, RS 2 g/l. Limited-edition parcel. Good lift on the nose. Powerful with dried cherry notes and really quite aggressive acidity. The whole impression seems pretty hard work at the moment what with the high alcohol, acid, tannin and sugar!!! A bit too much for me. (JR)
